Our knockwursts are made from lean pork and beef mixed with a specialty blend of seasonings developed by a German mentor of Steve’s. It’s a combination of German Vienna’s & sausage, creating the best of both. It’s then stuffed in natural casings and smoked over natural hardwood embers until fully cooked. Just heat & eat on a bun, with or w/o sauerkraut & crafted mustards. The weight of the Knockwurst is determined after it is fully smoked ranging from 1 to 1.25 lbs.
